You will need.........
The amounts, and ingredients, needed will vary according to your own taste.
Little Gem Lettuce, the heart shredded.
3 Spring Onions, finely sliced.
5 Radishes, thinly sliced.
5 Cucumber slices, all cubed.
1 medium Tomato, chopped.
Red, Green, Yellow Peppers, chopped. (Optional.)
Mayonnaise.
Half teaspoon Mustard.
Dash of Salad Cream.
Salt and Pepper, to taste.
OPTIONAL EXTRAS include:
Prawns,
Small Chicken pieces,
Ham, or crispy Bacon (cold.)
Chopped boiled Egg.
Method:
In a small bowl mix all the salad ingredients (including optional extras) except the Mayonnaise, half teaspoon of Mustard, and the dash of Salad Cream, Salt and Pepper.
Add the Mayonnaise at the top of the salad according to the consistency you require (enough to slightly coat everything).
Add the dash of Salad Cream, Mustard, Salt and Pepper onto the Mayonnaise.
Now stir and mix everything up. Add more Mayonnaise if the mixture is too "dry".
Serve up in two fancy dishes or glasses and decorate with twisted cucumber slices.
As a side, fresh crusty buttered rolls go well with this dish.
This is a variation on the theme of a "Prawn Cocktail"
and I have developed it to make it a full main meal!
Not only is it a very refreshing meal for a Summer day but is equally healthy
during the Winter months as ingredients are now readily available everywhere.
