You will need.........
Slices of thick Brown Wholemeal Bread.
Thick slices of Mature Cheddar Cheese.
Thinly sliced Mushrooms.
Finely chopped, or thinly sliced Onion.
Thinly sliced Jalapeno Peppers.
Hot Roasted Chestnuts.
Method:
Toast the bread on both sides, then butter one side. Put a thin layer of onion on the toast, and on top of this put a thin layer of the sliced mushrooms. Cover these two layers withn the cheese and put a few thinly sliced Jalapeno Peppers on the cheese. An alternative to these Jalapeno Peppers is Cayenne Pepper thinly sprinkled on the cheese; or if you dont like it hot some thinly sliced Tomatoes will do!!
Put the slice with all the ingredients on under the grill until the cheese is just starting to brown. The juices from the cheese will cook the mushrooms and onion underneath!!
And serve with a side-salad of Celery hearts with sticks broken off, hot Roasted Chestnuts when in season, Tomatoes, and Lettuce and Cucumber if you want to include these too.
When roasting the Chestnuts nick the pointed top off the shells to let out the steam as they cook, otherwise they will explode in the oven!! Roast for 15 to 20 minutes in a hot oven, check one to see if it's cooked and soft!
